Brewing with Local Barley

Just a few hundred metres from our brewery, Bencombe Farm grew a crop of Laureat Spring barley, which when harvested will be used to brew some of our beer.

We’ve brewed with barley from Bencombe Farm before and have always been impressed with its quality. Working with the farm that owns the site the brewery sits on means there’s a strong local connection between where our ingredients are grown and where our beer is brewed.

Seeing the barley growing in the neighbouring fields is a reminder that great beer starts long before the brewing process begins. It begins in the soil, with carefully grown crops and the skills of people who produce them.

The barley is harvested each summer before being traditionally floor-malted by Warminster Maltings, the UK’s oldest traditional maltsters.

It’s not just our barley that’s local. We also brew with water from our own on-site borehole, giving us a reliable supply of fresh brewing water from beneath the brewery itself.

Using local ingredients wherever possible strengthens our connection to the countryside around us and helps create beers that are unmistakably rooted in Buckinghamshire. It’s something we’re proud of, and another small part of what makes Rebellion beer unique.
